Hey,
I've always thought about getting into fanfiction since there's no reason it couldn't be as good as original fiction, but I haven't had much luck finding anything that suits my preferences.
Can anyone recommend stories for someone who isn’t into shipping, prefers strong plot and worldbuilding, and isn’t a fan of cheesy tropes?
My favorite series is A Song of Ice and Fire, I also like Star Trek, Warhammer, Greek mythology and anything Dungeons & Dragons related.

Fanfiction recommendations for someone who's never liked fanfiction
Hello new friend. The one true king comes with Stannis recommendations. (and you know, some not about Stannis at all). I've read a ton of asoiaf fics, many with either no shipping or very minimal. I go through an asoiaf fanfic reading phase every time I don't really wanna deal with ships
I mostly read only really long-ass fics in asoiaf so the story can really get into a lot of plot and world-building, though I have like 2 recs for shorter stories that still feel very organic.
Long epics if you really wanna bite into something meaty:
Enduring the Storm is a self-insert fic, which people may think is cringe but is actually the bread and butter of this fandom for some reason, and this fic is really damn good. Features SI into Stannis during Robert's Rebellion. (Fic is originally posted in Alternate History forum, I think, but I can't find the link just now, so have at the AO3 mirror instead.)
In Good Company is Stannis slowly going nuts. I think. I love this fic but I can't remember anything about it lmao. if you check out the author on FF.Net, they write really fantastic asoiaf fics, mostly short but impactful ones too.
Stannis the Black Stag is another fic about Stannis during Robert's rebellion. Unfinished, but I find the first chapter the absolute coolest thing.
Wearing Robert's Crown is an SI into Robert Baratheon. Also unfinished, but long enough and with enough meat in it to bit into.
Love and Honor is a what-if of Ned Stark not dying at the end of AGOT.
Maester Wolf is Jon Snow sent to the Maesters instead of the Wall, and then uses all that knowledge to help Robb Stark win the WO5K.
Robb Returns is Robb Stark returning to life and to a part of his story where he knows he can still make a difference. I actually can't remember this too well, read it a couple years ago, but I remember the Robb Stark fics I'd read had been quite good.
A Knight's Watch is Jon Snow sent to squire to Robar Royce (I think!) instead of the Wall. Some shipping, but I was safely able to ignore it.
Kingdoms at War is another Ned doesn't get executed at the end of AGOT.
The Squire of Dragonstone has Jon squiring for Stannis instead of going to the Wall.
Shorter fics if those epics don't appeal to you:
Justice isn't sold to the highest bidder has Stannis and Davos working Stannis' actual job as Master of Ships.
The Blood of Kings where Renly doesn't die by shadow-baby assassination.

Just adding my one non-asoiaf rec. idk which dnd worlds you dig, but I'm very into Dragonlance pre-fifth age reboot. Grew up reading it, and while Raistlin will always trump Fistandoodle, his story is already told, and exceptionally well in Legends. So here's one about Fistandantilus instead: The Rise of Fistandantilus.

Pretty sure Enduring the Storm, at the very least, can be read fandom blind. Same with A Knight's Watch.
